Description

Pastel de nata recipe

Ingredients for the puff pastry
  • 300g flour
  • 250g margarine or butter
  • 1/4 teaspoon salt
  • 50ml water

Ingredients for the custard
  • 1/2 litre liquid cream
  • 6 egg yolks
  • 8 tablespoons sugar
  • Cinnamon or icing sugar

Method
  1. Preheat the oven to 290°C.
  2. Mix the flour, salt and water until you get a smooth, compact dough.
  3. Divide the margarine into 3 parts. On the work surface, roll out the dough, add small pieces of margarine and roll it back up.
  4. Roll it out again, add more margarine and repeat this process 3 times. Leave the dough to rest in the fridge for 20 minutes.
  5. Mix the egg yolks with the sugar and pour the mixture into a bain-marie pan.
  6. Heat gently, add the cream and stir until the custard thickens. Remove from the heat and leave to cool.
  7. Roll out the puff pastry as thinly as possible, cut out circles, line the moulds and pour in the filling.
  8. Bake for about 15 minutes at 290°C, until the pastéis de nata are cooked and nicely golden.
  9. After baking, unmould and serve hot or cold, sprinkled with cinnamon or icing sugar.
