The Wüsthof Epicure Santoku with dimples is a true all-rounder in the kitchen. The Santoku is a Japanese chef’s knife, named after the three applications in the kitchen: slicing, dicing and chopping. A Santoku is great when you are preparing meat, fish and vegetables. The dimples ensure that air comes in between the blade and the product that is being cut so that it won’t stick to the surface. With the high blade you can immediately ‘scoop’ the cut products in the pan. The shape of the Wüsthof Epicure is a little broader to ensure that more pressure is put on the product that is being cut. The full-tang blade is made from one piece of X50CrMoV15 steel. In addition, the excellent quality of the steel has been given another dimension while it was forged and during the subsequent solidification process. As such the steel determines the sharpness and sustainability of the knife. Furthermore, the hardness of 58 HRC guarantees that the knife remains sharp, flexible and is easy to sharpen.
