The Wüsthof Epicure 24 cm chef’s knife can handle anything! The knife has a broad and solid blade for cutting vegetables, meats and fish, but you can also use it to chop herbs. Chef’s knives are enhanced with a high blade of approximately 4 to 5 cm enabling you to place the fingers you are using to hold the food, against the side of the blade. As such you can work quickly and safely. The shape of the Wüsthof Epicure is a little broader to ensure that more pressure is put on the product that is being cut. The full-tang blade is made from one piece of X50CrMoV15 steel. In addition, the excellent quality of the steel has been given another dimension while it was forged and during the subsequent solidification process. As such the steel determines the sharpness and sustainability of the knife. Furthermore, the hardness of 58 HRC guarantees that the knife remains sharp, flexible and is easy to sharpen.
